Zippy Carrot Muffins
These remind me of Thanksgiving and pumpkin pie because of the spices used. Not as decadent as those delicious Carrot Cake Cupcakes that I made for my birthday, but a smidge healthier because there is less sugar, and they are just perfect for breakfast. Another Happy Herbivore recipe success!
Zippy Carrot Muffins
1 + 1/4 cup whole wheat flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp allspice
1/2 cup raw sugar
1 + 1/2 cup unsweetened applesauce
1 tsp vanilla extract
1 large carrot, shredded
Preheat oven to 350 degrees. Whisk dry ingredients together in a large bowl, then add wet ingredients, stirring until just combined. Fill greased muffin tin cups 3/4 full and bake for 18-25 minutes, or until a toothpick inserted in the center comes out clean.
