Whole Food Sweet Apple-Oat Muffins

A great recipe to use up an apple that’s past its crunchy prime!  These are incredibly moist and delicious, full of apple flavor from the applesauce and chopped apples.  These whole food muffins derive their sweetness from dates, blackstrap molasses, and apples–NO refined sugar!  Healthy food can taste amazing and decadent, and these muffins prove it!

Whole Food Sweet Apple-Oat Muffins

Recipe type: Muffin
Serves: 12
  • 1 + ½ cup whole wheat flour
  • ½ cup old-fashioned oats
  • 2 tbsp ground flax (flax meal)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • few dashes of ground nutmeg
  • few dashes of ground ginger
  • 1 cup unsweetened applesauce
  • 1 cup pitted dates
  • ½ cup hot water
  • 1 tsp pure vanilla extract
  • 1-2 tbsp blackstrap molasses
  • 1 cup chopped apples, skins on
  • ½ cup chopped pecans or walnuts
  1. Preheat oven to 350 degrees.
  2. In a food processor, process dates, hot water, applesauce, vanilla, and molasses until mostly smooth (it'll still be somewhat lumpy).
  3. In a large bowl, whisk flour, oats, ground flax, baking powder, baking soda, and spices together.
  4. Add contents of food processor to the flour mixture.
  5. Pulse apples(I use 2 small) in food processor to chop, then add to the bowl.
  6. Pulse nuts in food processor to chop, then add to the bowl.
  7. Stir until just combined.
  8. Spoon batter into greased muffin tin and bake for about 18 minutes, or until a toothpick inserted comes out clean.
