Super-Chocolatey Whole Foods Vegan Brownies
I’ve been on the hunt for a good black bean brownie recipe since those disastrous ones from the Happy Herbivore. I love Lindsay Nixon’s recipes, but every once in a while, she has a serious flop (umm, her chocolate chip sponges, er, cookies). These brownies are awesome–whole foods, nutrient-dense, and sooo chocolatey. Why would anyone make brownies from a box mix when you could have something this delicious?
This recipe is my adaptation of Chef AJ’s Outrageous Brownie recipe from The Complete Idiot’s Guide to Plant-Based Nutrition, by Julieanna Hever.

Ingredients
- 1 15-oz can black beans, rinsed and drained
- 1 + ¼ cups pitted dates (I use Deglet Noor)
- ½ cup hot water
- 2 tbsp flax meal
- 1 tbsp pure vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp ground cinnamon
- ½ cup cocoa powder
- ¼ cup unsweetened applesauce
- ¾ cup whole wheat flour
- 1 cup vegan chocolate chips
- ½ cup finely chopped raw, unsalted pecans (or walnuts)
Instructions
- Preheat oven to 350 degrees.
- Process beans, dates, and hot water in a food processor until smooth.
- Add flax meal, vanilla, baking powder, baking soda, cinnamon, and cocoa powder. Process for 30 more seconds.
- Add applesauce and flour, and process until just combined. I added a little water to make the batter smoother and a little thinner.
- Stir in chocolate chips.
- Pour batter (it will be thick) into 8 x 8 greased baking pan. Sprinkle chopped nuts and additional chocolate chips, if desired, on top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.

Wow! I thought it was me. I also made the HH brownies and had to throw them out. I am again inspired since you said you liked this recipe. I saw this in my FOK recipe book and wondered if it would be good. Wish me luck!!
