Sneaky Grilled "Cheese" Sandwich

The key to getting my toddler to eat these was giving her the tomato soup to dip them in–it helps mask the true ingredients of the sandwich. I think the recipe itself, from the Everyday Happy Herbivore cookbook, needs some tweaking. I ate one of the sandwiches, too, and I think the proportions are off. It tasted too much like mustard and ketchup. I also think that next time I make this, I’ll add just a little bit of a sweetner–processed cheese does have some sweetness, and that’s what we’re trying to imitate here.
Still, all in all a success.

Sneaky Grilled “Cheese” Sandwich

1/3 cup nutritional yeast
1/2 cup nondairy milk
2 tbsp white whole-wheat flour
2 tbsp cornstarch
1 tbsp ketchup
2 tsp yellow mustard
1 tsp granulated onion powder
1 tsp granulated garlic powder
1/4 tsp dried dill
4 slices of toast

Whisk all ingredients except toast together in a saucepan and heat over high heat, stirring constantly until really thick. (It ended up the consistency of peanut butter)
Spread the “cheese” on the toast. For toddlers, use cookie cutters to cut out fun shapes! Serve with tomato soup.

    I cut the mustard in half (or even a bit less than that).
