Quinoa Tabbouleh
Ahhh…nothing says summer like a refreshing salad with crisp veggies. I love the Asian Slaw, but this is a tasty alternative that is higher in protein due to the quinoa. It has a very light, simple flavor and is easy to prepare.

Quinoa Tabbouleh
Recipe type: Quick One-Pot Dinner
Ingredients
- 1 cup quinoa, well rinsed and drained
- 2 cups water
- ½ cup edamame
- 1 fresh tomato, chopped
- ½ cucumber, chopped
- 1 tbsp fresh lime juice
- 1 tbsp fresh lemon juice
- 1 tbsp low-sodium soy sauce
- fresh chives, minced
- fresh parsley, minced
- fresh thyme, minced
Instructions
- Combine quinoa with water and salt in medium saucepan. Bring to a boil and then reduce to simmer for 20 minutes.
- Remove from heat and allow to cool. Place all ingredients in large bowl and toss to combine well.
