Jo’s Loaded Fried Rice

I don’t know who Jo is, but when I had this amazing fried rice named for him at a Thai restaurant in Sandusky, Ohio, I knew I had to recreate it. I think I did a pretty good job! I would never have thought to put a ton of different bean varieties or raisins in fried rice, but it’s awesome. As with any fried rice, feel free to flex the amounts and types of vegetables in it.

Jo's Loaded Fried Rice
Recipe type: Quick One-Pot Dinners
  • 1 small yellow onion, diced
  • 1 + ½ cups vegetable broth
  • 1 tbsp low-sodium soy sauce (can sub tamari for gluten-free option)
  • 1 cup frozen peas and diced carrots
  • ⅔ cup frozen corn
  • ½ cup raisins
  • 1 cup canned garbanzo beans, drained and rinsed
  • 1 cup canned pinto beans, drained and rinsed
  • 1 cup canned kidney beans, drained and rinsed
  • 4-6 cups prepared rice, boiled in broth instead of water
  • sliced almonds
  • raw sunflower seeds
  • cilantro to garnish
  1. Saute onions in large pot.
  2. Add vegetable broth, soy sauce, vegetables and raisins and cook until done.
  3. Add beans and cook until warm, adding additional broth if necessary.
  4. Add rice and mix very well.
  5. Before serving, sprinkle almonds, seeds, and chopped cilantro on top.

    I made this the other night for me and the kids we all liked it 🙂 Thinking about going mostly plant based when I have a kitchen to myself again. Thanks for the recipes and inspiration.

    Delish! My kids both liked it. My eight year old daughter liked it even though she didn’t want to (my kids are not so enthusiastic about my trying all these new things 🙂 ). She looks in, says she doesn’t like beans. I suggested that she try them because maybe they taste different in this recipe. She eats bite after bite and says she doesn’t like the beans, she doesn’t even like the chickpeas, etc. She finishes the bowl — and wants seconds. And thirds. I also had lots (I don’t need to say how many servings, do I? 🙂 )
