Crockpot Split Pea Soup

I recently got Healthy Eating For Life For Children by the Physicians Committee for Responsible Medicine, and this recipe is one of 91 included. The book itself is good–it lays out the facts about a healthy, whole foods, plant-based diet in a simple, straightforward manner–but I still prefer the personal voice in Disease-Proof Your Child. This soup tastes very similar to the Split Pea and Root Vegetable Soup, but even more convenient to make because it’s in the crockpot, and I love that it has potatoes in it.

Crockpot Split Pea Soup

2 cups split peas
6 cups water or vegetable broth
1 medium onion, chopped
1 large carrot, sliced
2 celery stalks, sliced
1 large potato, peeled and diced
1 large yam, peeled and diced
2 garlic cloves, minced
1/2 tsp dried marjoram
1/2 tsp dried basil
1/4 tsp ground cumin
1/4 tsp black pepper

Combine all ingredients in a crockpot and cook on high until peas are tender, about 6 hours.
