Avocado-Black Bean Salsa
I loooove me some avocados, so of course I jumped on this salsa recipe when I spotted it on Pinterest. It’s fast, easy, and mild. It’s also, of course, very yummy! It does, however, make a lot of salsa and I’m not sure how well it will keep because of the avocado, so I would probably save this recipe for potlucks or parties.

Ingredients
- 1 can black beans, drained and rinsed
- 1 cup frozen whole-kernel corn, thawed
- 1 can fire-roasted diced tomatoes, with juice
- 2 garlic cloves, minced
- ¼ cup packed fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- 2 avocados, diced
Instructions
- Combine everything except avocados and stir really well.
- Gently fold in avocado chunks. Serve with tortilla chips.
