10-Minute Lunchbox Cookies
This recipe comes from the “Forks Over Knives” companion book and start to finish, really only takes ten minutes to make. These cookies have the approval of my 2-yr old.
10-Minute Lunchbox Cookies

Serves: 12
Ingredients
- ⅓ cup pure maple syrup
- ⅓ cup almond milk
- ¼ cup cocoa
- 3 tablespoons peanut butter
- 1 tsp vanilla
- 1 + ½ cups oats
- ¼ cup chopped walnuts
Instructions
- Combine maple syrup, almond milk, and cocoa in a saucepan and bring to a boil, then simmer for 3 minutes.
- Add the peanut butter and stir until dissolved.
- Remove from the heat and add the vanilla, oats, and walnuts. Stir well, then roll into cookies.
- Store these in a Tupperware container in the fridge.
How many calories in the 10-minute chocolate cookie balls?
I don’t track calories, so I couldn’t tell you. I just try to eat a plant strong diet and the calories work themselves out. 🙂
