Purslane Power
My friend Keelin gets a weekly produce box from a community-sponsored agriculture program and she shares generously. This week I was puzzled by this “weed” in the box. The included newsletter said it’s purslane and recommended including it in a salad or smoothie. I wanted more information, so I looked it up and discovered it is, indeed, a “gourmet” weed. This succulent herb contains alpha-linolenic acid, one of the highly prized omega-3 fatty acids, in fact it contains five times the omega-3s as spinach and the stems are high in vitamin C.
I enjoyed purslane in my morning green smoothie.

I find it so interesting how many things there are to eat that we don’t know we can eat. Then the flip side it isn’t like you can just go out and eat every green thing on the planet! Food is so fascinating some times!!
