A Healthy Homemade Power Bar

Aha! Finally, a tasty recipe that makes use of the random bag of cacao nibs that I bought, as well as the container of pitted dates! I used my Vitamix instead of a food processor, and it worked well. These bars remind me of Larabars in taste, appearance and texture. The recipe is from the Forks Over Knives companion book.

A Healthy Homemade Power Bar
Recipe type: Snack
  • 1 cup fresh or dried dates, pitted
  • 1 + ½ cups natural almonds
  • 1 banana
  • ½ cup cacao nibs
  • 1 teaspoon vanilla extract
  • dried, shredded coconut
  1. If you're using dried dates, soak them in water for a few minutes, then drain.
  2. Pulse almonds in blender or food processor until broken up, but still in crunchy chunks. Set aside.
  3. Pulse banana, cacao nibs and vanilla until just mixed. Add to bowl of almond chunks.
  4. Finally, blend the dates. Scrape them into the bowl with the rest of the ingredients and mix.
  5. Sprinkle some coconut over the bottom of an 8"x8" pan. Scrape the mixture on top of the coconut and press it down evenly with your hands or a spatula. Sprinkle more coconut on top. Store in a refrigerator. Cut into bars and enjoy the gooey, healthy goodness!
