10-Minute Lunchbox Cookies

Ingredients
  • ⅓ cup pure maple syrup
  • ⅓ cup almond milk
  • ¼ cup cocoa
  • 3 tablespoons peanut butter
  • 1 tsp vanilla
  • 1 + ½ cups oats
  • ¼ cup chopped walnuts
Instructions
  1. Combine maple syrup, almond milk, and cocoa in a saucepan and bring to a boil, then simmer for 3 minutes.
  2. Add the peanut butter and stir until dissolved.
  3. Remove from the heat and add the vanilla, oats, and walnuts. Stir well, then roll into cookies.
  4. Store these in a Tupperware container in the fridge.
