Black Bean Burger
Ingredients
  • 1 15-oz can black beans, drained and rinsed
  • ¼ cup fresh cilantro, minced
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp paprika
  • ¼ tsp onion powder
  • pepper, to taste
  • ¼ cup breadcrumbs
Instructions
  1. Preheat oven to 350 degrees.
  2. Pulse beans in food processor until well-mashed.
  3. Transfer to a mixing bowl and stir in cilantro and spices.
  4. Add breadcrumbs and mix with your hands.
  5. Shape mixture into 3 patties and place on parchment-lined cookie sheet.
  6. Bake for 15-20 minutes, flipping the patties at the halfway point.
  7. Serve immediately on buns, because they'll dry out as they sit.
