Peppermint Hot Chocolate

Peppermint Hot Chocolate
  • ¼ cup canned coconut milk*
  • 1.5 cups water
  • 3 peppermint tea bags
  • 1 tbsp honey (could sub agave)
  • ¼ cup dark chocolate chips
  • 1 tsp cocoa powder
  1. Combine coconut milk, water and tea bags in saucepan and bring to a boil.
  2. Turn down heat and simmer for 10-15 minutes.
  3. Remove from heat, take out tea bags, and add cocoa powder, honey and chocolate chips, stirring until combined.
  4. Pour into mug and enjoy!
  5. *When you open a can of coconut milk, the coconut milk fat will be at the top, with coconut "water" below it. Depending on how creamy (fatty) you want your hot chocolate, you can use the coconut milk fat, the "water," or a combination of the two.
