Lentil Dal

Ingredients
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 tsp turmeric
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tbsp ground ginger
  • 1 cup dried red lentils
  • 4 cups vegetable broth
  • 2 chopped tomato with juices
  • 1 6-oz can tomato paste
  • 1 tbsp ground coriander
  • 2 tsp garam masala
Instructions
  1. Saute onions and garlic in a medium pot until translucent.
  2. Add turmeric, cumin, paprika, and ginger and coat the onion mixture, cooking a couple minutes.
  3. Add lentils, broth, tomato, tomato paste, and coriander, stirring to combine.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes or until lentils are cooked.
  5. Add garam masala, stirring to combine, and let rest 5 minutes.
