Vegan, Gluten-Free Pumpkin Chocolate Chip Bars

Ooey, gooey, and almost guilt-free. No dairy, eggs, or wheat.
  • 3 cups gluten free oats or 2.5 cups oat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1¼ tsp cinnamon (I recommend cassia rather than ceylon in this recipe)
  • ⅛ tsp nutmeg
  • pinch of ground cloves
  • 1 cup pure pumpkin pack
  • 2 tsp pure vanilla extract
  • ½ cup unsweetened applesauce
  • ½ cup light brown sugar
  • 1 tbsp coconut oil, melted
  • ⅓ cup vegan chocolate chips
  1. Preheat oven to 350 degrees and spray an 8x8 glass pan (typically called a brownie pan) with cooking spray.
  2. If making oat flour, whiz 3 cups gf oats through high speed blender until flour-like consistency.
  3. Combine 2.5 cups oat flour with baking powder, baking soda, cinnamon, nutmeg, and cloves in a bowl.
  4. In a separate large bowl, combine pumpkin pack, brown sugar, vanilla extract, coconut oil, and applesauce and stir until smooth.
  5. Pour dry mixture into wet mixture and stir until just combined.
  6. Fold in chocolate chips and pour batter into prepared pan.
  7. Bake for 18-22 minutes or until cake tester comes out clean.
