Super-Chocolatey Whole Foods Vegan Brownies
  • 1 15-oz can black beans, rinsed and drained
  • 1 + ¼ cups pitted dates (I use Deglet Noor)
  • ½ cup hot water
  • 2 tbsp flax meal
  • 1 tbsp pure vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • ½ cup cocoa powder
  • ¼ cup unsweetened applesauce
  • ¾ cup whole wheat flour
  • 1 cup vegan chocolate chips
  • ½ cup finely chopped raw, unsalted pecans (or walnuts)
  1. Preheat oven to 350 degrees.
  2. Process beans, dates, and hot water in a food processor until smooth.
  3. Add flax meal, vanilla, baking powder, baking soda, cinnamon, and cocoa powder. Process for 30 more seconds.
  4. Add applesauce and flour, and process until just combined. I added a little water to make the batter smoother and a little thinner.
  5. Stir in chocolate chips.
  6. Pour batter (it will be thick) into 8 x 8 greased baking pan. Sprinkle chopped nuts and additional chocolate chips, if desired, on top.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
