Baked Oatmeal Breakfast Muffins

Serves: 6
- 1 cup oats
- 1 tsp cinnamon
- 2 stevia packets (or a few tablespoons of white or brown sugar)
- ½ cup unsweetened applesauce
- ½ tsp vanilla extract
- ½ cup non-dairy milk
- 2 tbsp raisins (optional)
- 1 tbsp chopped nuts (optional)
- Preheat oven to 375 degrees.
- Mix dry ingredients together, then add wet ingredients, stirring thoroughly.
- Pour into greased muffin tin (6 standard or 3 jumbo) and bake for approx. 15 minutes.
- Turn oven to high broil setting and bake for 3 more minutes to crisp up the top.
- Top with maple syrup, icing, fruit, or eat as is!
