Jo's Loaded Fried Rice
Recipe type: Quick One-Pot Dinners
  • 1 small yellow onion, diced
  • 1 + ½ cups vegetable broth
  • 1 tbsp low-sodium soy sauce (can sub tamari for gluten-free option)
  • 1 cup frozen peas and diced carrots
  • ⅔ cup frozen corn
  • ½ cup raisins
  • 1 cup canned garbanzo beans, drained and rinsed
  • 1 cup canned pinto beans, drained and rinsed
  • 1 cup canned kidney beans, drained and rinsed
  • 4-6 cups prepared rice, boiled in broth instead of water
  • sliced almonds
  • raw sunflower seeds
  • cilantro to garnish
  1. Saute onions in large pot.
  2. Add vegetable broth, soy sauce, vegetables and raisins and cook until done.
  3. Add beans and cook until warm, adding additional broth if necessary.
  4. Add rice and mix very well.
  5. Before serving, sprinkle almonds, seeds, and chopped cilantro on top.
