Apple-Dijon-Marinated Tempeh Triangles
Ingredients
  • 1 8-oz package plain tempeh
  • ½ cup pure apple juice
  • 1 tbsp Dijon mustard
  • 1 tbsp tamari (or soy sauce)
  • 2 tbsp extra virgin olive oil
  • 2 tsp raw apple cider vinegar
Instructions
  1. Slice tempeh into 4 equal rectangles, then cut each horizontally so that they are half the original thickness.Then cut each of the 8 resulting rectangles diagonally to form triangles.
  2. Place triangles in a shallow baking dish in a single layer.
  3. Whisk remaining ingredients together in a bowl and pour over the triangles.
  4. Allow to marinate for 30 minutes, then bake at 350 degrees for 30 minutes.
  5. Try these as a side or in a sandwich!
