Whose Kitchen Is This???

figs_01 I realized just how much my pantry (and I) have changed since incorporating vegan eating into our lifestyle when I flipped to a recipe in Tosca Reno’s “Eat-Clean Diet Cookbook” that I’d always wanted to try. The recipe–Breakfast Fruit and Nut Cookies–has always looked delicious, but I never had the off-the-wall ingredients. Until now. Yesterday when I flipped past it, I realized I now have all that “weird” stuff in my cupboard. It is really exciting to be able to cook so many different things now, without having to run to the store first. Figs? Got ’em. Ground flax? Absolutely.

These cookies were divine, and even my 2-yr old scarfed one up. Admittedly, they are not vegan/whole foods eating due to the white flour, oil, and egg whites, but they are much healthier than a standard homemade cookie.

1/2 cup brown sugar
1/4 cup light oil
3 egg whites
1/4 cup chopped dried figs
1/4 cup dried cranberries
1 tsp vanilla
1 cup flour
1/2 cup whole wheat flour
1/2 cup bran flakes
2 Tbsp ground flax (flax meal)
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/4 cup slivered almonds
