All you need is two minutes to mix this up and less than a minute to microwave it and there you have it…a single serving of chocolate cake. It’s super-chocolately, gooey and delicious. Awesome! Thanks, Chocolate-Covered Katie.
Single-Serving Chocolate Cake
1 tbsp + 2 tsp cocoa powder
3 tbsp flour (white or part white/part whole wheat; don’t use all whole wheat)
2 tsp brown sugar
1/4 tsp baking powder
1 stevia packet (or another tbsp of sugar)
1 tbsp canola oil (or 1 tbsp unsweetened applesauce)
3 tbsp non-dairy milk
1/4 tsp pure vanilla extract
Combine dry ingredients in a microwave-safe container (I used a glass Pyrex measuring cup the first time I made it) and mix extremely well. Add liquids, stir, then microwave at least 40 seconds (closer to 50 seconds if you used applesauce instead of oil). If you don’t want to eat it straight out of the dish, transfer it to a greased microwave-safe ramekin or dish before microwaving, and then wait for it to cool before trying to remove it.
