Although I love the yam fries, plantains are far easier to peel and slice than yams and are a tasty alternative. This “recipe” is only limited by your creativity with spices. You could go with Indian spices, like garam masala. You could go spicy with cumin and cayenne pepper. Or you could make these plantain chips more into a dessert with cinnamon and sugar. I simply sprinkled a little salt on top and served them with ketchup, like french fries. Choose greener plantains for more of a potato taste and yellow or browning plantains for a sweeter taste.
Bake on greased cookie sheet at 400 degrees for about 16-18 minutes, flipping the plantain chips after 8 minutes.
