Morning Glory Muffins

I was feeling ambitious this morning, so I made the Happy Herbivore’s Morning Glory Muffins. So much good stuff in these muffins! Jam-packed healthy, yumminess.

Morning Glory Muffins

1.5 cups oat flour
2 tsp baking powder
1 tsp baking soda
1 tsp pumpkin pie spice
1/3 to 1/2 cup raisins
1 cup shredded carrots
6 oz silken tofu
2 tbsp nondairy milk
1/2 cup canned pure pumpkin
1/3 cup dates
1 tsp vanilla extract
1/4 cup light brown sugar

If you don’t have oat flour, you can make it by processing oats in a blender or food processor until flour consistency is achieved. Combine oat flour, baking powder, baking soda, pumpkin pie spice, raisins, and shredded carrots together in a mixing bowl. Blend tofu, milk, pumpkin, dates, vanilla, and sugar together until smooth, then pour into mixing bowl with flour mixture. Stir until combined and let batter rest while the oven preheats to 350 degrees. Spoon batter into muffin liners and bake for 18-23 minutes.
