Baked Oatmeal Muffins

I’ve been experimenting with different breakfasts for my kids other than cold cereal, so they’ve been eating quick oats the past week (although my eldest refers to it as ‘porridge’).  This morning, I decided to try something different with this take on Chocolate Covered Katie’s Cinnamon Roll Baked Oatmeal.  I used a jumbo muffin tin and the recipe made three jumbo muffins (6 standard muffins).  The kids split one and my husband and I each ate a full one.

 

Baked Oatmeal Breakfast Muffins
 
A sweet and simple alternative to cereal!

Serves: 6
Ingredients
  • 1 cup oats
  • 1 tsp cinnamon
  • 2 stevia packets (or a few tablespoons of white or brown sugar)
  • ½ cup unsweetened applesauce
  • ½ tsp vanilla extract
  • ½ cup non-dairy milk
  • 2 tbsp raisins (optional)
  • 1 tbsp chopped nuts (optional)
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix dry ingredients together, then add wet ingredients, stirring thoroughly.
  3. Pour into greased muffin tin (6 standard or 3 jumbo) and bake for approx. 15 minutes.
  4. Turn oven to high broil setting and bake for 3 more minutes to crisp up the top.
  5. Top with maple syrup, icing, fruit, or eat as is!
