Who says Thanksgiving has to be a giant hunk of turkey with stuffing and sweet potato casserole on the side? Our Thanksgiving meal was not vegan, certainly, with the ample amount of chicken in the squash soup and the Pillsbury biscuits my husband requested, but it was significantly healthier than the average American’s. Apparently, the average American Thanksgiving meal contains about 2,000 calories. This one contained about 900 calories, so it was still high, but this was a treat meal.
