Almond Butter Chocolate Chip Cookies, Gluten-Free and Dairy-Free

This recipe is so fast and so simple–just six ingredients and no complicated steps or clean-up. Although they aren’t as healthy as some of my other cookie recipes–they do have quite a bit of fat from the almond butter and they do have coconut sugar–they are still “healthier” than a standard cookie. They are higher in protein and have a lower glycemic... read more

Vegan, Gluten-Free Pumpkin Chocolate Chip Bars

I’ll be making an effort to post more gluten-free recipes. I’m dealing with some thyroid issues and one of the recommendations has been to cut dietary gluten. No worries, though! As I’ve learned since cutting dairy, eggs, and red meat–it’s not about what you can’t eat, it’s about what you can eat. And in my case, there is absolutely no sense of... read more

Savory Spinach & “Cheese” Muffins (vegan)

The muffin is such a perfect medium for food delivery–small, portable, and packs a lot of punch in a few bites.  This one was inspired by two things: some wilting green onions and baby spinach in my fridge, and those cheesy biscuits at Red Lobster.  It’s a little less healthy than my normal fare due to the oil and vegan cheese shreds, but it’s still pretty healthy... read more

Chickpea Nuggets and Preschool “Meat” Day

Imagine my surprise when I received an email from my daughter’s preschool teacher informing me that “Meat Day” was approaching and students would be offered a variety of different types of meat to sample, and since my daughter wouldn’t be eating it, would I please send in a snack for her that day?  She continued on by stating that she had no idea what we ate in... read more

Zucchini-Banana Muffins

I know, I know–another muffin recipe!  I can’t help it–I love muffins and so do my kids.  I think they’re great because they fill in where otherwise I would offer some highly processed food, like Fig Newtons.  When I bake muffins, I control all the ingredients and am able to pack in fruits and veggies.  This recipe uses a ton of zucchini and several bananas and makes a big... read more

Whole Food Sweet Apple-Oat Muffins

A great recipe to use up an apple that’s past its crunchy prime!  These are incredibly moist and delicious, full of apple flavor from the applesauce and chopped apples.  These whole food muffins derive their sweetness from dates, blackstrap molasses, and apples–NO refined sugar!  Healthy food can taste amazing and decadent, and these muffins prove it! Whole Food Sweet Apple-Oat Muffins... read more

Whole Foods Chocolate-Zucchini Muffins

The longer my family lives a plant-based lifestyle, the more committed I become to eliminating processed and refined food.  As I’ve previously posted, I am constantly tweaking recipes to see if I can make them a wee bit healthier.  One of the easiest ways is to replace the sugar with dates.  I mentioned some of my successes in my The Sugar Problem: What’s the Sweet Solution? post.  The... read more

Cinnamon-Maple Muffins (Pancake Muffins)

A delightful treat at breakfast or anytime, these muffins are perfect drizzled with pure maple syrup. My husband decided these taste just like pancakes.  The recipe is adapted from the Happy Herbivore’s French Toast Muffins. Walnut Coconut Butter

I made a new nut butter recipe today, and while telling my husband about it, he commented, “Wow, you’ve been trying a lot of different nut butters…if there are all these different options, why do people always eat plain old peanut butter?  And are there health benefits to eating other nut butters?”  The answer to his second question is easy–different nuts... read more

"Cheesy" Roasted Cauliflower

I’m not a huge cauliflower fan, so I was totally shocked by how much I love these little bites of tastiness! I think I consumed about half a head of cauliflower myself. I liked these by themselves, but my daughter liked them dipped in ketchup. The prep is crazy-easy.  The nutritional yeast imparts a “cheesy,” rich flavor and tons of added nutrition.  For those not familiar with it,... read more

Avocado-Black Bean Salsa

I loooove me some avocados, so of course I jumped on this salsa recipe when I spotted it on Pinterest. It’s fast, easy, and mild. It’s also, of course, very yummy! It does, however, make a lot of salsa and I’m not sure how well it will keep because of the avocado, so I would probably save this recipe for potlucks or parties.   Avocado-Black Bean Salsa   Print Avocado-Black... read more

Chocolate-Zucchini-Banana Muffins

What a delightfully sneaky way to get my kids to eat banana (they’re on a strike) and zucchini! The veggies are nearly undetectable in this chocolatey, moist, mildly sweet muffin. The chocolate chips make it feel like a dessert, too! This recipe is from the original Happy Herbivore Cookbook.   Chocolate-Zucchini-Banana Muffins   Print Recipe type: Muffin Ingredients 1 + ¼ cups... read more
