Welcome to Super Veggie Mom! I run faster than a speeding couch potato and am able to leap the produce section in a single bound! And I do it all while juggling sippy cups and errant socks.
Super Veggie Mom began as my writing outlet after my freelance writing work tapered off. My family had recently seen Forks Over Knives and I was becoming passionate about nutrition and healthy eating. To learn more about how we got started eating this way, see this post. Here, I have a medium to share health and wellness information, recipes that have worked for me, tips about saving money, and angst over parenting struggles.
As far as my background, I have a B.S. and M.A. in English. I am an Air Force veteran, former NASM-certified personal trainer, and a distance runner with almost a dozen half-marathons under her Adidas. I’m the mother of two young girls and married to a scary-smart engineer and when we’re not watching Yo Gabba Gabba, we enjoy theater and the arts.
I want everyone to know that healthy food can be delicious, simple to prepare, and that children will not only enjoy it with you–they will crave it and thrive as a result of eating it.
